Albanian Walnut Cake with Lemon Glaze

This is a moist cake from Albania and the Lemon Glaze is the highlight of the cake.

Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 tbsp flax seed powder + 3 tbsp water
  • 1/3 cup yogurt
  • 1/3 cup buttermilk
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp lemon zest
  • 1 cup walnuts finely chopped

Lemon Glaze

  • 3/4 cup water
  • 1 cup water
  • 1/4 cup lemon juice

Instructions

  • Preheat oven to 180 degree C.
  • Cream together butter, sugar, till light and frothy.
  • Add the dissolved flax seed powder.
  • Blend in yogurt and buttermilk.
  • Sift all dry ingredients and add them to the prepared mix.
  • Stir in the lemon zest and walnuts.
  • Pour the batter in a lined and greased baking tin.
  • Bake for 30-40 minutes or until a tooth pick comes out clean.
  • Make the glaze by simmering in all ingredients under Lemon Glaze.
  • When the cake is done, pour the lemon glaze over the hot cake and return to the oven for 10 minutes.
  • Let the cake cool a little before cutting it.
