Anarosher Chutney ( Pineapple Chutney )

Anarosher Chutney / Pineapple Chutney is a delicious sweet , slightly tart and spicy chutney , popular in Bengali homes .

Ingredients

  • 2 cups pineapple pieces chopped
  • 1/2 tsp oil
  • 1/2 tsp mustard seeds
  • 1 bay leaf
  • 1 whole red chilli
  • 1/3 cup sugar
  • 1/2 tsp ginger juice
  • 2 pinches salt
  • 3/4 cup water

Instructions

  • Heat oil add mustard seeds , bay leaf and whole red chilli.
  • Add the pineapple pieces let cook for a minute or two.
  • Add ginger juice , salt and water and let it cook till it shrinks a little .
  • Add sugar and let it cook for another 15-20 minutes cover and cook tillĀ  the pineapple pieces have softened .
  • The water and sugar will make a thick syrup coating the pineapples.
