C - Chocolate Cake with Spotted Chocolate Collar

A sinful chocolate cake with chocolate frosting, chocolate garnish and a chocolate collar.

Ingredients

Cake

  • 200 gms all purpose flour
  • 400 gms condensed milk
  • 4 tbsp cocoa powder
  • 4 tbsp butter room temperature
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 200 ml aerated drink

For Moistening

  • 1/4 cup aerated drink
  • 1 tsp chocolate essence

For Filling and Frosting

  • 400 gms dark chocolate
  • 2oo gms whipping cream
  • 4 tbsp butter

Instructions

Cake

  • Sieve the flour, baking powder, baking soda and cocoa powder.
  • Mix butter and condensed milk.
  • Add flour mix and aerated drink to this mix.
  • Beat the ingredients till a smooth batter is formed.
  • Pour into a lined greased baking tin.
  • Bake at 180 deg C for 30 -35 minutes or till done.

For Moistening

  • Mix the two.

For Filling and Frosting

  • Melt the chocolate and cream.
  • Add butter and remove from fire.
  • Let it come to room temperature.

For the Chocolate Collar

  • Use a piece of string to measure the circumference of your cake.
  • Measure how high you'd like the collar to go
  • Cut a strip of baking paper the same length and height and place on a flat surface.
  • Melt milk chocolate in a double boiler till it melts. Place in a piping bag. Pipe circles on the baking paper. Set aside to set .
  • Pour the tempered dark chocolate over the complete strip, smear with a spatula and allow to set.
  • Let the chocolate collar sit undisturbed until the chocolate loses its sheen and has set. but not dried or become hard.
  • Lift the collar gently and wrap it around the cake, removing the strip.

Assembling the Cake

  • Once the cake is baked, let it cool .
  • Cut the cake in two layers.
  • Moisten the cake with coke mix on both sides.
  • Spread the filling and place the other half of the cake on top.
  • Spread the rest of the frosting on top, you need not be very neat on it as we are going to garnish it with chocolate.
  • Make the chocolate collar and wrap it around the cake.
  • Garnish with shredded chocolate.
