D - Dundee Cake
Dundee Cake is a traditional Scottish Cake , where the top is always decorated with almonds.

- 11/2 cups all purpose flour
- 2 tbsp butter
- 3/4 cup sugar
- 1/2 cup oil
- 1 cup mixed dried fruit currants, raisins, candied peel
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla essence
- 2/3 cup milk
- 30 pieces almonds blanched
Beat sugar, oil and butter till creamy.
Add milk and vanilla essence.
Sift flour, baking powder, baking soda.
Mix the dry ingredients to the wet ingredients.
Add the mixed fruit and mix well.
Decorate with almonds.
Bake at 180 deg for 35-40 minutes or till done.
