D - Dundee Cake

Dundee Cake is a traditional Scottish Cake , where the top is always decorated with almonds.

Ingredients

  • 11/2 cups all purpose flour
  • 2 tbsp butter
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1 cup mixed dried fruit currants, raisins, candied peel
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla essence
  • 2/3 cup milk
  • 30 pieces almonds blanched

Instructions

  • Beat sugar, oil and butter till creamy.
  • Add milk and vanilla essence.
  • Sift flour, baking powder, baking soda.
  • Mix the dry ingredients to the wet ingredients.
  • Add the mixed fruit and mix well.
  • Decorate with almonds.
  • Bake at 180 deg for 35-40 minutes or till done.
