Kesari Cheeni ki Roti

Kesari Cheeni ki Roti is a sweet flat bread which is flavored with cardamom and saffron. Both cardamom and saffron lend a beautiful aroma to the bread.

Ingredients

  • 1 cup wheat flour
  • 3-4 tbsp ghee
  • Pinch salt
  • 2-3 tbsp sugar
  • 1/4 tsp cardamom powder
  • Few strands saffron

Instructions

Dough

  • Take the flour in a bowl.
  • Add pinch of salt and 1 tbsp ghee.
  • Adding water gradually knead the dough .
  • Cover and let the dough rest for 30 minuets .

Making the Paratha

  • Preheat a griddle .
  • Pinch out a lemon sized portion of the dough .
  • Dust with dry flour and roll to a 3” disc .
  • Spread some ghee and place 11/2 tsps of sugar, cardamom powder and a few strands of saffron .
  • Bring together the edges and seal the Paratha.
  • Flatten the Paratha with your palms first and then gently roll till it is about 5” .
  • Place the Paratha on the heated griddle , mind you it should not be overheated .
  • Flip after a couple of seconds .
  • Apply ghee on the cooked side and flip again .
  • Now apply ghee on the other side.
  • Cook till the Paratha is nice and crisp .
