Kutchi Bread Channa

Kutchi Bread Channa is a Street Food from Kutch .The pav is stuffed with channa , and then soaked in a spicy and a sweet chutney .

Ingredients

  • Channa
  • Aloo
  • Spicy green Chutney
  • Sweet tamarind chutney
  • Pav make your own or store bought

Channa

  • 1 cup boiled chickpeas
  • 1/4 cup boiled mashed potato
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp red chilly powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste

Aloo

  • 1 large boiled potato
  • 1/2 tsp oil
  • Pinch turmeric powder
  • Salt to taste

Spicy green chutney

  • 6 green chillies
  • 1 tbsp mint leaves
  • 2 tbsp coriander leaves
  • 1/2 cup tamarind juice
  • Black salt to taste

Sweet tamarind chutney

  • 1/2 cup tamarind juice
  • 2 tbsp jaggery
  • 1/4 tsp roasted cumin seed powder
  • 1/4 tsp red chilly powder
  • Pinch asafoetida
  • Pinch black salt
  • Salt to taste

Instructions

Channa

  • Heat oil and add cumin seeds, let crackle.
  • Switch off the flame and add all spices.
  • Switch on the flame and sauté the spices till roasted.
  • Immediately add the boiled Channa and potatoes .
  • Mix well.
  • Keep aside.

Aaloo

  • Heat oil and add the potatoes, salt and turmeric .
  • Mix well , place the potatoes on top of Channa .
  • Garnish with coriander .

Spicy green chutney

  • Blend all ingredients under spicy chutney till a smooth paste is formed .
  • Remove it in a big bowl and dilute the chutney till it is quite watery .
  • Check for salt and spice .

Sweet Tamarind Chutney

  • Add grated jaggery to tamarind juice and cook till the jaggery melts .
  • Add the spices and cook for one more minute .
  • Remove it in a big bowl and dilute till quite watery .
  • Check for sweetness , if you want it more sweet add powdered sugar .

Pav

  • Slit the pav into three slices. Do not cut through and through .
  • Cover the Pav with a moist napkin .

Preparing the Bread Channa

  • Take a pav, and fill the channa mixture between the slits .
  • Place it in a plate and pour both the chutneys lavishly , so that the Pav gets moist .
  • Sprinkle coriander and serve.
