Litti

Litti is a Bihari bread in the form of a dough ball , stuffed with spicy sattu which is roasted gram flour. The Litti is roasted over coal and is a close cousin to Rajasthani Baati .

Ingredients

Litti

  • 1 cup wheat flour
  • 2 tbsp ghee
  • 1/2 tsp baking powder
  • Salt to taste

Stuffing

  • 1 cup sattu flour
  • 1/2 tsp red chilly powder
  • 1 tbsp pickle masala
  • 1/4 tsp fennel seeds
  • 1/2 tsp mangrela Bihari masala
  • 1/2 tsp lemon juice
  • Salt to taste

Instructions

Sattu Stuffing

  • Mix all dry ingredients under stuffing .
  • Now add oil and lemon juice . Mix again.
  • Sprinkle a few drops of water so that the stuffing can come together .

Litti

  • Take the flour in a bowl .
  • Add salt and baking powder , mix well .
  • Rub in ghee and adding water bind a stiff but pliable dough.
  • Pinch out tennis size bowls .
  • Take a ball and shape it like a bowl .
  • Fill in a tbsp of the prepared stuffing .
  • Pull the edges and bring together to seal the ball .
  • Roll it neatly and make a perfect ball .
