Nariyal ki Meethi Roti

Nariyal ki Meethi Roti is a sweet flatbread stuffed with coconut and nuts . It has the goodness of coconut , tastes amazing , looks pretty and above all has been made in an airfryer .

Ingredients

Dough

  • 1 cup all purpose flour
  • Water to bind

Stuffing

  • 2-3 tbsp ghee
  • 1 tsp semolina
  • 3/4 cup coconut
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tsp cardamom powder
  • 2 tbsp almonds pistachios , chopped
  • Few strands saffron

Instructions

Dough

  • Take the flour in a bowl and knead to a semi soft dough .
  • Cover and keep aside for 15 minutes .

Stuffing

  • Take a non stick pan and add ghee to it .
  • Roast the semolina till pink .
  • Immediately add the coconut .
  • Roast the coconut for 3-5 minutes .
  • Add milk and sugar and stir well .
  • Add the cardamom powder and nuts .
  • Simmer the mixture for 2-3 minutes or till the ghee separates .
  • Let cool.

Making the Roti

  • Pinch out six lemon sized balls from the dough .
  • Roll each ball into a 6” disc .
  • Place one disc on the counter and spread the prepared stuffing .
  • Make sure you leave1/4” on the sides .
  • Apply water on these edges .
  • Place another disc on top of the stuffing and seal the edges .
  • At this point you could make a decorative design .
  • Brush the paratha with very little ghee and roast the paratha for a minute on both the sides on a griddle .
  • Pre heat the airfryer for 5 minutes and place one paratha at a time in the airfryer to roast . It should take 4-5 minutes to get that golden colour at 180 temperature .
  • Remove and enjoy without any extra ghee or brush with ghee and garnish with nuts .
