Q - Queen Elizabeth Cake

Queen Elizabeth Cake is a special cake from Great Britain which was prepared on the coronation of Queen Elizabeth II.

Ingredients

  • 11/2 cups whole wheat flour
  • 1 tsp baking soda +pinch extra
  • 1 tsp baking powder
  • 3/4 cup sugar
  • 1 cup seedless dates chopped
  • 1 cup water
  • 1/2 cup oil / butter
  • 1/2 cup walnuts
  • 1 tsp vanilla essence

Caramel

  • 60 gms butter
  • 65 ml cream
  • 95 gms brown sugar

Instructions

  • De seed the dates, if not using seedless ones.
  • Chop them into smaller pieces.
  • Place them in a bowl.
  • Sprinkle a pinch of baking soda on dates.
  • Heat water, and pour this hot water over the dates.
  • Cover the bowl for 10-15 minutes.
  • Mix the flour , baking soda and baking powder.
  • Mix in the powdered sugar.
  • Now puree the dates along with water.
  • Add oil to it and pulse the mixer again so that the oil and dates blend well.
  • Add vanilla extract.
  • Mix all wet ingredients with the dry ingredients .
  • Add walnuts and mix again.
  • Pour into a lined and greased baking tin and bake at 180 deg for 40-45 minutes or till done.
  • Check with a skewer , if it comes out clean the cake is done. Let cool.

Caramel

  • In a non stick pan keep sugar to melt.
  • The flame should be low.
  • After the sugar melts, cook it for another two minutes, stirring constantly.
  • Add butter and as soon as it melts, add cream.
  • The caramel has to be stirred continuously and the fire very low.
  • Once the three ingredients incorporate the caramel is ready.

Finishing the Cake

  • Pour the prepared caramel on the cake.
  • Sprinkle shredded coconut.
  • Return back to the oven for 5 -7 minutes, till the coconut toasts lightly.
  • Garnish with dates and walnuts.
