Rajgira ka Paratha

Rajigiri Roti is a healthy gluten free Indian flat bread made with Amarnath flour or rajigiri flour as called in Hindi . This is a roti which is normally made during the fasting days .

Ingredients

  • 1 cup rajgira
  • 1/2 cup potatoes boiled , mashed
  • 1 tsp green chilly chopped
  • 1 tsp ghee
  • coriander leaves
  • Salt to taste

Instructions

  • Using a mixing bowl , add flour ,boiled mashed potatoes, green chilly , coriander leaves , oil and salt.
  • Mix all ingredients well with hand .
  • Start kneading the dough , you will require very little water as we are using oil and potatoes , both will help in binding .
  • Knead to a dough which should not be very soft .
  • Pinch out lemon sized balls .
  • Take one ball , flatten it and then dust it with rajgira flour .
  • Roll to a 4-6” disc .
  • Cook on a griddle using medium flame .
  • Apply ghee on the cooked side then flip over and apply ghee on the other side too .
  • Cook till brown spots appear on both the sides .
  • Make rest of the parathas in the same manner .
  • Serve with Fariyali Aloo ki Sabzi .
