Rice and Curry in Banana Leaf

Rice and curry in Banana leaf packets are rice and curry packed in banana leaves , steamed and then served as a complete meal .

Ingredients

Rice

  • 1 cup basmati rice
  • 2 tbsp oil
  • 1 bay leaf
  • 1 big cardamom
  • 1 large onion
  • 1/4 tsp red chilly powder
  • 1/4 tsp garam masala
  • Salt to taste

Curry

  • Paste
  • 1/2 cup fried onion
  • 1 tbsp coconut grated
  • 3-4 whole red chillies
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/4 ginger
  • 2 cloves garlic
  • 1/4 cup tomato purée
  • Salt to taste

Vegetables

  • 1/4 cup green peas boiled
  • 1/4 cup cottage cheese cubes marinated with salt and chilly powder

Other ingredients

  • fried onion
  • kasoori methi

Instructions

Rice

  • Wash and soak the rice for 30 minutes .
  • Heat oil.
  • Add bay leaf and big cardamom .
  • Add onions and sauté till pink .
  • Add red chilly powder and garam masala .
  • Add 2 cups water . Let boil .
  • Add salt and rice .
  • Cook till almost all water is absorbed , simmer and cook on Dum for 5-7 minutes .
  • Each grain of the cooked rice should be separate .

Curry

  • Heat the ghee .
  • Sauté the paste for 3-4 minutes .
  • Add little water and boil .
  • The curry should be thick .

Assembling the rice packets

  • Cut the banana leaf into medium sized squares .
  • Spread one portion of rice, spread some curry on top .
  • Place a slice of cottage cheese .
  • Spread some green peas .
  • Sprinkle fried onion and kasoori methi .
  • Fold the individual packets securing with tooth picks or they remain perfectly sealed if you place them upside down .
  • Steam the packets for at least 15 minutes .
  • Serve hot .
