Soybean ji Bhaji

Soybean ji Bhaji is like mock meat and is cooked with lots of onions, ginger garlic, and tomatoes. This is cooked in typical Sindhi style of cooking called Daag where I used soya granules as well as chunks.

Ingredients

  • 1 cup soya granules and chunks
  • 3 onions finely chopped
  • 1 tbsp ginger garlic paste
  • 6 tomatoes puréed
  • 1/2 tsp red chilly powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp garam masala
  • Salt to taste

Instructions

  • Soak the soyabean in hot water for 15 minutes.
  • Heat oil , add onions, sauté till pink .
  • Add ginger garlic paste and sauté till the onions turn brown .
  • Add puréed tomatoes and cook till all moisture dries up .
  • Drain the water from soyabean and squeeze with hands to remove excess moisture .
  • Add the squeezed soybean and sauté well, till the raw smell of soya is gone. If very dry add some oil.
  • Add all spices including salt .
  • Cook with spices till the spices are cooked , about a minute .
  • Add water and adjust the gravy consistency.
  • Pressure cook for 2 whistles and then simmer for 5-7 minutes.
  • Open after the pressure is released.
  • Serve hot with rice or chapati.
