Surati Paratha

Surati Paratha is a unique and interesting mixed vegetable paratha invented by a lady in Surat, The paratha is a wholesome and delicious meal.

Ingredients

Dough

  • 1 cup wheat flour
  • Salt to taste
  • Water for binding the dough

Stuffing

  • 1/2 cup carrots grated
  • 1/4 cup beet root grated
  • 3/4 cup cabbage grated
  • 1 small potato boiled , mashed
  • 2 cubes cheese grated
  • 1 green chilly chopped
  • leaves Coriander
  • 1 tsp chilly sauce
  • 1/4 tsp garam masala
  • 1/4 tsp Chat masala
  • Salt to taste

  • Cheese for garnish

Accompaniments

  • curd
  • Ketchup
  • green chutney

Instructions

Dough

  • Add salt to the flour and bind using water .
  • Bind to a semi soft dough.
  • Cover and keep aside for 15 minutes.

Stuffing

  • Sprinkle salt over grated veggies .
  • Let rest for 5-7 minutes.
  • Gently squeeze the water from these veggies .
  • Mix rest of the ingredients to these veggies .
  • Mix well to prepare the stuffing .
  • Divide the stuffing into two .

the Paratha

  • Pinch out a big ball from the dough .
  • Roll it into a 6” disc.
  • Place one of the stuffing balls in the centre .
  • Bring the corners together and seal it to make it into a ball .
  • Flatten the ball lightly and dust with dry flour .
  • Roll it into a disc , about 8” .
  • Heat a griddle .
  • Add a tbsp of oil .
  • Fry the papad in this oil , keep aside .
  • Now place the paratha , let it cook till brown spots appear.
  • Flip over and cook the other side .
  • Drizzle some more oil , so the Paratha is nice and crisp .
  • Remove the paratha on the chopping board . Using a pizza cutter cut the paratha as though slicing a pizza , but be careful just cut the top layer , do not cut through and through .
  • Now start opening these cut flaps one by one .
  • This will look like a sunflower .
  • Place the fried papad in the centre.
  • Crush it lightly .
  • Grate cheese lavishly over the papad .
  • Sprinkle coriander leaves .
  • Serve hot with tomato ketchup, chutney and curd .
  • Make the other paratha in the similar manner .
