Thai Freekeh Salad
A high protein salad with the super grain Freekeh, made the Thai style. A medley of flavors and a must-try.
Prep Time 10 minutes minutes Cook Time 15 minutes minutes Total Time 25 minutes minutes
- 2 cups freekeh cooked
- 1 /2 cup bell peppers mixed colours , diced
- 1/4 cup purple cabbage julline
- 1 stem spring onion roughly chopped
- 1/4 cup moong bean sprouts raw
Dressing
- 1/4 cup peanut butter
- 1 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp lime juice
- 1 tsp olive oil
- Salt to taste
Garnish
- carrots
- peanuts coarsely ground
Mix all the salad ingredients in a bowl .
Microwave peanut butter and honey for a minute or till they both combine well .
Using a whisk , mix in rest of the ingredients.
Make sure they combine well .
Pour the dressing over the salad , mix well .
Garnish with carrots and coarsely ground peanuts .
