Pide is a boat shaped Turkish pizza, one can stuff anything in this boat, from meat to vegetables. I added tomato and corn with a generous layer of cheese.

Ingredients
Dough
11/2cupsall purpose flour
1tspinstant yeast
1tsp¼salt
1tspsugar
2tbspolive oil
1cupwarm water
Tomato Puree’
4tomatoes
2bay leaves
1onionfinely chopped
1tspgarlicfinely chopped
2tbspready tomato puree’
cup¼tomato ketchup
1tspsugar
2tbspolive oil
Salt to taste
Other ingredients
1cupboiled corn kernels
basil leaves
Chilly oil
Instructions
Dough
Mix both the flours, yeast, salt, sugar and 2 tbsp olive oil.
Add warm water and knead a soft dough.
Sprinkle some all purpose flour and knead the dough for about 10 minutes.
Place the dough in a greased bowl and cover it.
Leave it to rise for an hour.
Purée
Blanch the tomatoes.
Peel and finely chop the tomatoes.
Heat olive oil.
Add bay leaf .
Add onions and garlic. Saute’.
Add tomato and simmer for 10-15 minutes.
Add ready puree’ and ketchup.
Add salt.
Let cool.
Grind to a paste.
Assembling
Roll the dough into a oval shape .
Apply the puree’, make sure to leave the edges.
Add the corn kernels.
Sprinkle a lavish layer of cheese .
Now lift the edges to form a rim , pinch at ends to form a boat shape .
Cover and keep aside for 15 minutes .Preheat the oven and place the pide to bake at 180 deg C for 15 minutes .
