Ulte Tawe ki Roti

Ulte Tawe Ke Parathe are Lucknowi parathas made on an inverted griddle . These parathas are soft and melt in the mouth kinds and pair very well with any kebabs or curry .

Ingredients

  • 500 gms all purpose flour
  • 50 gms ghee
  • 1 tsp sugar
  • 250 ml milk
  • Salt to taste

Instructions

  • Sieve the flour .
  • Add sugar and salt .
  • Rub in the ghee with fingertips so as to resemble bread crumbs .
  • Slowly add milk and bind to a semi soft dough .
  • Cover and place in the refrigerator for 15 minutes.
  • Remove and make balls from the dough.
  • Roll into a thin disc of about 6-8” .
  • Heat a ulta tawa and wipe it with a greased cloth .
  • Place the roti on the tawa .
  • Cook till the colour changes .
  • Flip and cook the other side .
  • Similarly cook the other rotis .
  • Apply ghee and serve with Kebabs .
