Bataka Bhaji
2-4tbspOil
6Tomatoes
Few Curry Leaves
1tbspGinger Green Chilly Paste
2-3Potatoesboiled, mashed
1/4tspTurmeric Powder
1tspCoriander Powder
1/2tspChilly Powder
Salt to taste

Instructions
Place a pan to heat. Add oil.
To the hot oil, add curry leaves and ginger garlic paste. Saute for a minute and add the chopped tomatoes.
Cook the tomatoes till soft and mushy.
Add salt, turmeric and red chilly powder. Cook the spices for a minute and add boiled and mashed potatoes. Mix well so everything is blended uniformly.
Add water to adjust the consistency.
Garnish with fresh coriander leaves and serve with Pav bread, fried chillies and garlic chutney.
Both fried chillies and garlic chutney are optional, but recommended for that extra flavour.
