Whole Wheat Carrot Cake with Walnuts

Ingredients

  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 11/2 cups carrots grated
  • 11/4 cups sugar
  • 11/2 cups curd
  • 1/4 cup milk
  • 1 tsp vanilla essence
  • pinch salt
  • 1/4 cups walnuts coarsely chopped

Instructions

  • Preheat oven to 180 deg C for 10 minutes
  • Sift flour, baking powder, baking soda and salt.
  • In another bowl add sugar, curd, oil, milk and vanilla essence.
  • Beat well till everything is well incorporated.
  • Mix in the dry sifted ingredients, carrots and walnuts.
  • Bake in a preheated oven for 35 - 40 minutes or till done.
  • Check with a skewer, if it comes out clean, the cake is done.
