Anjeer Barfi

Anjeer Barfi is a barfi which is loaded with a variety of nuts and dried figs. Figs is the base of this Indian sweet and lends its sweetness and hence makes it sugar-free and guilt-free.

Ingredients

  • 250 gms dried figs
  • 100 gms almonds
  • 50 gms cashews
  • 50 gms Pistachios
  • 1 tsp cardamom powder
  • 1/2 tbsp ghee / oil

Instructions

  • Wash the figs and microwave with 3-4 tsp of water for 4 minutes.
  • Let cool.
  • Grind them in a mixer, till you get a smooth paste. This process should always be done in short bursts.
  • In a nonstick pan add 1/2 tsp ghee, warm it.
  • Add the fig paste.
  • Roast for 2-3 minutes, to remove the stickiness and the moisture. Remove and cool.
  • Add nuts to this and knead like a dough.
  • Divide the dough into two and make rolls.
  • Cling wrap the rolls and refrigerate for 30 minutes.
  • Cut into slices.

Notes

Variation You can use Dates instead of Figs or a combination of Figs and Dates. Dates can be ground directly, There is no need to microwave them.
