Anjeer Barfi is a barfi which is loaded with a variety of nuts and dried figs. Figs is the base of this Indian sweet and lends its sweetness and hence makes it sugar-free and guilt-free.

 

Anjeer is figs and for this Barfi dried figs are used. Fresh figs are sweet juicy and their flesh is loaded with crunchy seeds, which is an absolute delight, but the dried ones make an excellent anytime snack. They are full of vitamins, minerals and antioxidants and are available throughout the year. These figs can be enjoyed as it is, or one can soak them overnight, where they plump up, they can also be used to make Mithai. jams and preserves.

 

The Anjeer Barfi is a very popular sugar-free Indian sweet where the figs are chopped into small pieces, and after making a paste of these, a variety of nuts is added to add a crunchy element and volume to it. It is a simple yet delicious and nutritious sweet, it is a guilt-free sweet as it is not loaded with ghee or fat.

 

The Anjeer Barfi has a good shelf life and can be stored for more than two months, but it has to be stored in a refrigerator. I make rolls so that we can store them for a longer period of time. One should make rolls which are packed in a cling film and placed in an airtight container. When required they can be removed and cut into pieces.

Anjeer Barfi

Ingredients

250 gms dried figs
100 gms almonds
50 gms cashews
50 gms pistachios
1tsp cardamom powder
1/2 tbsp ghee/oil

Method

Wash the figs and microwave with 3-4 tsp of water for 4 minutes.
Let cool.
Grind them in a mixer, till you get a smooth paste. This process should always be done in short bursts.
In a nonstick pan add 1/2 tsp ghee, warm it.
Add the fig paste.
Roast for 2-3 minutes, to remove the stickiness and the moisture. Remove and cool.
Add nuts to this and knead like a dough.
Divide the dough into two and make rolls.
Cling wrap the rolls and refrigerate for 30 minutes.
Cut into slices.

Variation
You can use Dates instead of Figs or a combination of Figs and Dates.
Dates can be ground directly, There is no need to microwave them.
