Warm water and add sugar, mix.
Add yeast and mix again, cover and keep aside for 10 minutes.
In a bowl add flour and salt. Mix.
Stir the yeast mixture and add to the flour.
Mix gently with hands.
Once it comes together, bring it on the counter.
Knead the dough well, till it is smooth, finally make a ball by folding in.
Take a bowl, drizzle oil lavishly.
Place the dough ball into the greased bowl.
Cover with a damp cloth and keep aside till it doubles. This shall take about an hour.
Now punch down the dough lightly and bring it on a dusted countertop.
Divide the dough into 8 pieces.
Take one piece of dough and shape into a ball by folding the sides up and pressing them together.
Swirl it round and round, seam side touching an unfloured surface to make a perfect ball.
Make the rest of the balls in a similar manner.
Let rest for 10 minutes.
While they rest, make the seasoning by mixing all ingredients mentioned under seasoning.
After 10 minutes, take a ball and press the centre with your index finger.
Twirl around with two fingers gently so as to form a hole and stretching the dough gently.
We have to make a hole not more than an inch in diameter.
Similarly, make holes in all the balls.
Place a pot of water to boil.
Once it comes to a rolling boil, drop the ball one by one. Do not overcrowd the pot.
Boil for 1 minute on one side, flip and boil the other side.
Remove with a slotted spoon on to a greased baking tray.
Brush with milk and sprinkle the seasoning.
Bake for 20 minutes at 246 degrees C.
