Easy Homemade Bagels is a ring-shaped dense, chewy bread which is first cooked in water and then baked.
It was some 10 years back, on my visit to US, that I had my first Bagel. My cousin got me fresh Bagels and pack of cream cheese to go with it. New Yorkers claim that they have the best Bagels in the World. Well, we cannot deny it. The Bagels there are really good, they are dense, chewy with a doughy interior and crisp exterior. Bagels are often topped with seeds baked on the outer crust, with the traditional ones being poppy and sesame seeds.
Bagels are traditionally shaped like a ring, the hole is made with a finger and this bread resembles a doughnut. These are made by first cooking them in boiling water for one or two minutes to lock in its flavour. Then they are browned in the oven to create that hard, delectable crust.
Well, like I have told you for this Bakeathon most of the bakes have been baked by Juhi, including these Bagels. I have to admit that they were perfectly baked and they had a fantastic crust. We made some sandwiches with these Bagels. The standard is with cream cheese, tomatoes, capers and onions with some sea salt and freshly milled pepper, and that’s what we made.
I loved these Bagel sandwiches and have asked Juhi to bake them again, but she is just like us – not wanting to repeat the recipes. She loves to try new stuff. Well, Doesn’t that help me too, and isn’t this what we want?

Easy Homemade Bagels
Ingredients
500 gms bread flour (about 3.5 cups) ( I used regular flour )
23 gms white sugar (about 1.5 tablespoons)
10 gms instant dried yeast (about 1 tablespoon)
297 gms warm water @90 degrees Fahrenheit (about 320 ml)
6 gms salt (1 1/2 tsp )
Everything Bagel Seasoning
2 tbsp dried garlic flakes
2 1/2 tbsp dried onion flakes
1 1/2 tbsp white sesame seeds
1 tbsp poppy seeds
1 tbsp black sesame seeds
1/2 tbsp flakey salt or kosher salt (ideally flakey)
1/2 tbsp nigella seeds
Method
Warm water and add sugar, mix.
Add yeast and mix again, cover and keep aside for 10 minutes.
In a bowl add flour and salt. Mix.
Stir the yeast mixture and add to the flour.
Mix gently with hands.
Once it comes together, bring it on the counter.
Knead the dough well, till it is smooth, finally make a ball by folding in.
Take a bowl, drizzle oil lavishly.
Place the dough ball into the greased bowl.
Cover with a damp cloth and keep aside till it doubles. This shall take about an hour.
Now punch down the dough lightly and bring it on a dusted countertop.
Divide the dough into 8 pieces.
Take one piece of dough and shape into a ball by folding the sides up and pressing them together.
Swirl it round and round, seam side touching an unfloured surface to make a perfect ball.
Make the rest of the balls in a similar manner.
Let rest for 10 minutes.
While they rest, make the seasoning by mixing all ingredients mentioned under seasoning.
After 10 minutes, take a ball and press the centre with your index finger.
Twirl around with two fingers gently so as to form a hole and stretching the dough gently.
We have to make a hole not more than an inch in diameter.
Similarly, make holes in all the balls.
Place a pot of water to boil.
Once it comes to a rolling boil, drop the ball one by one. Do not overcrowd the pot.
Boil for 1 minute on one side, flip and boil the other side.
Remove with a slotted spoon on to a greased baking tray.
Brush with milk and sprinkle the seasoning.
Bake for 20 minutes at 246 degrees C.
Bagel Sandwich
Slice the bagel and apply a generous layer of cream cheese.
Top with tomato slices, capers and onions.
Sprinkle sea salt and freshly milled pepper or your favourite seasonings.
Sandwich the Bagel with the other half slice and enjoy.

These bagels look so gorgeous Vaishali. I wish I could grab them all. I have also been planning to bake some for a while now. Will get to it asap. And that cheese knife is so cute.
