Eggless Whole Wheat Banana and Walnut Cake

Eggless Whole Wheat Banana and Walnut Cake is a flavorful , healthy cake made with ripe bananas and whole wheat flour . I have used walnuts for that crunch but you could add chocolate chips or raisins or even banana slices .

Ingredients

  • 3-4 ripe bananas
  • 1/2 cup brown sugar
  • 2/3 cup rice bran oil
  • 1 tsp vanilla extract
  • 11/2 cups wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch salt
  • Handful walnuts chopped

Instructions

  • Preheat the oven at 180deg C.
  • Prepare a baking tin by lining and dusting .
  • Peel and mash the bananas .
  • Add sugar , oil and vanilla extract .
  • Mix well using a blender .
  • Sieve the flour , baking powder , baking soda and salt .
  • Gradually add the dry ingredients to the wet , mixing well .
  • Add the chopped walnuts and mix again .
  • Pour into the cake tin and bake at 180 deg C for 40-45 minutes or until a skewer comes out clean .
