Kesari Phirni with Mango & Nuts

Kesari Phirni with Mango is a traditional dessert of Punjab with a slight twist . Phirni is a milk based rice pudding . It is creamy , yet light .

Ingredients

  • 500 ml milk full fat
  • 1/4 cup rice
  • Sugar to taste
  • 1/4 tsp cardamom powder
  • Few strands saffron
  • 3-4 in mangoes choppedcubes
  • Almonds and Pistachios chopped
  • Rose syrup

Instructions

  • Wash and soak the rice for an hour .
  • Grind the rice to a fine paste.
  • Boil the milk , after it boils add cardamom powder and sugar .
  • Crush the saffron in a mortar and pestle .
  • Add to the milk .
  • Now simmer the gas and gradually add the rice paste .
  • Keep stirring continuously to avoid lumps .
  • As soon as the milk becomes thick , remove from fire .
  • Let cool , while it is cooling make sure you stir it at regular intervals to avoid the formation of skin .
  • Once cool pour the kheer into individual bowls .
  • Cover with a cling film and refrigerate .
  • Before serving add mango cubes , drizzle some rose syrup and finally sprinkle some chopped almonds and pistachios .
