Koshimbir
Koshimbir is another name for a salad .This Koshimbir belongs to Udupi Cuisine . The salad is high protein and had a mix of raw lentils and veggies .

- 1/4 cup moong daal
- 1 cucumber peeled and chopped
- 1 carrot grated
- 1 tbsp raw mango finely chopped
- 1 green chilly chopped
- 1/4 tsp ginger grated
- 1/2 tsp cumin powder
- Lemon juice to taste
- Salt to taste
- coriander leaves
Wash the moong daal and soak till the daal is soft , yet has a crunch .
Mix in all the ingredients , adding salt and lemon juice too .
Mix well and garnish with coriander leaves.
