Koshimbir

Koshimbir is another name for a salad .This Koshimbir belongs to Udupi Cuisine . The salad is high protein and had a mix of raw lentils and veggies .

Ingredients

  • 1/4 cup moong daal
  • 1 cucumber peeled and chopped
  • 1 carrot grated
  • 1 tbsp raw mango finely chopped
  • 1 green chilly chopped
  • 1/4 tsp ginger grated
  • 1/2 tsp cumin powder
  • Lemon juice to taste
  • Salt to taste
  • coriander leaves

Instructions

  • Wash the moong daal and soak till the daal is soft , yet has a crunch .
  • Mix in all the ingredients , adding salt and lemon juice too .
  • Mix well and garnish with coriander leaves.
