Use a board or a platter depending on the number of people enjoying it. I made for a party where we were 10 of us .
I used a board which was 23 x 32'.
No Mezze platter would be complete without the classic hummus. So we start with the classic hummus making it the center piece. Try adding different variations of hummus so that we have contrasting colours. I added Beetroot Hummus and Basil Hummus. You can also add different dips like Muhammara, Tzatziki or Spring Onion Sauce.
Salads are very refreshing and make excellent light appetisers . Place the salads on one side . I served two salads. The first one is a simple Potato Salad , which is very easy , colourful and delicious. The second salad is Fattoush.
Breads and Crackers add dimension to the boards. You can grill the pita to make it warm , but I prefer as it is . Manakeesh with Zatar is a flavorful bread and a perfect to scoop out various dips. Lavash and Cheese crackers make crunchy bitings. Try placing them around the dips.
Pickles like Mukhalal, Stuffed Peppers or marinated olives give a wonderful zing to these appetisers .
Falafel is a chickpea patty or a fritter if you may call it so. These fried beauties actually turn the evening platter into a wholesome dinner. Try placing them next to the pita , so you can fill your own pocket, something like a DIY .
Fill in the gaps with fresh fruits, like grapes , pomegranate and fresh veggies like cucumbers , Tomatoes or Avocado slices.
Cheese is a must on these boards and nothing like Homemade Labneh Balls . Feta too is a flavourful cheese and makes an excellent accompaniment with these breads.
Don’t forget to place a stack of napkins by the side of the board.
