Orange Rasagolla
Orange Rasagolla is a fusion version of the traditional Bengali sweet Rasagollas. These are stuffed with orange fiber and dunked into orange syrup.

For the Orange Syrup
- 2 oranges
- 1 cup water
- 1 cup sugar
- Zest of 1 orange
To begin, zest one of the oranges into a saucepan.
Juice both oranges into the pan.
Do not sieve, just remove the seeds.
Add in the water and sugar.
Bring it all to a gentle boil, reduce the heat and simmer for 10-15 minutes or until the liquid has reduced by about a third.
Allow the syrup to cool to room temperature.
Preparing the Rasagolla
Squeeze the syrup from the ready Rasagolla.
Cut them into two and scoop out a small portion from them to make a small cavity.
Place them in a shallow bowl, and pour some of the juice.
Fill the Rasagolla with the orange fiber.
Place in the refrigerator for 5-6 hours so that the flavor is well infused.
