Pineapple Jar Cakes
Pineapple Jar Cakes are cakes made in a jar, which have a vanilla sponge, some pineapple pieces, pineapple syrup and fresh cream.

Cake
- 1 1/3 cups flour maida
- 3/4 cup granulated sugar
- 1/2 tsp baking powder
- 1 tsp baking soda
- Salt-a pinch
- 3/4 cup milk
- 1/2 cup curd
- 1/2 cup oil
- 1 tsp vanilla essence
Other Ingredients
- Pineapple/ titbits
- Pineapple syrup
- whipped cream
Cake
Preheat oven to 180°C.
Grease and line a 7″ round cake tin.
In a bowl mix together flour, sugar, baking powder, salt and baking soda.
Add the curd, oil, milk and vanilla in the centre.
Mix it to form a smooth batter.
Pour it into the prepared cake tin.
Bake for 30-40 minutes or until a toothpick inserted comes out clean.
Rest it on the wire rack for 10 minutes.
Flip on the wire rack.
Cool it completely before wrapping in cling wrap.
Refrigerate until assembling.
Assembling the Jars
Crumble the cake.
Using a piping bag pipe out the cream at the bottom of the jar.
Add a layer of crumbled vanilla cake.
Drizzle some pineapple syrup.
Add pineapple titbits.
Pipe out a layer of whipped cream. Repeat the cake layer, topping with syrup, pineapple bits and finally with cream.
Garnish with mint and pineapple.
