Quinoa Kheer

Quinoa Kheer is a Indian fusion dessert made with the super grain Quinoa and milk . The grain is gluten free.

Ingredients

  • 1/4 cup quinoa
  • 1 tsp ghee
  • 1 cup milk
  • 3 tbsp sugar
  • Few drops vanilla essence
  • almonds

Instructions

  • Wash and rinse quinoa , soak it for 10-15 minutes .
  • Drain and keep aside .
  • Heat ghee in a pressure cooker .
  • Add the drained quinoa and sautĂ© for3-4 minutes .
  • Add 1/2 cup water and pressure cook for 2 -4 whistles .
  • Let the pressure release and open the pressure cooker.
  • Quinoa should be well cooked .
  • Add milk and cook on simmer till the milk has reduced 1/4.
  • Add sugar and cook for another 5-7 minutes on slow flame.
  • At this point you could minus sugar and add 2-3 tbsp of condensed milk .
  • Remove from fire and add vanilla essence .
  • Serve hot or chilled.
  • Garnish with almonds .
