Sai Bhaji Koftas

Sai Bhaji Koftas are koftas or deep fried dumplings made from the popular Sindhi dish SaiBhaji . Sai Bhaji is a mix of veggies , greens and lentils .

Ingredients

Koftas

  • 1 cup saibhaji ready
  • 1 onion small chopped
  • 2 green chillies finely chopped
  • 1 tbsp coriander leaves finely chopped
  • 2 tbsp besan / chickpea flour
  • 1/4 tsp coriander seeds
  • 1/4 tsp anardana
  • Salt to taste

Gravy

  • 1 onion large chopped roughly
  • 1 tbsp ginger garlic paste
  • 2 large tomatoes
  • 1 green chili
  • 1/2 tsp coriander powder
  • 1/8 tsp turmeric powder
  • 1/4 tsp chilly powder
  • 1/4 tsp garam masala
  • Salt to taste

Instructions

Koftas

  • Using a non stick pan , add the ready saibhaji to it .
  • Let cook on full flame , stirring at regular intervals .
  • Cook till the saibhaji is completely dry .
  • Switch off the flame , let cool .
  • Add all the ingredients mentioned and mix well .
  • The cooked Sai Bhaji has salt so make sure you add just a pinch .
  • Grease your hands and pinch out lemon sized balls .
  • Heat oil and drop them two at a time .
  • Fry till golden and crisp .
  • Alternatively use your air fryer to make them crisp .
  • The koftas are ready .

Gravy

  • Heat 2 tbsp oil and add onions .
  • Cook till they turn golden .
  • Add ginger garlic paste .
  • Cook for another minute .
  • Add tomatoes .
  • Cook till the moisture disappears .
  • Switch off the flame and let the mix cool.
  • Once cool blend it to a fine paste .
  • Transfer back to the pan .
  • Add the dry spices and cook for 2-3 minutes or till oil separates .
  • Add water to adjust the gravy consistency .
  • Let boil a few minutes .
  • Add the Koftas and serve.
