What could I choose for the alphabet ‘ X ‘ but for Xmas Cake ? Frankly speaking I did not put in the effort to search for something else . May be I should have but this made my task easy . So it is Xmas Cake for A -Z Baking around the World
Xmas cakes are popular all over the world and each country has it’s own version , they all have different names yet all are Xmas Cakes.I have two different Xmas cakes that I have already posted , you could check these here and here. I would have loved to make a frosted Christmas Cake, but like you know no one likes frosted cakes in the family.
Today’s cake is a jumble of many recipes. I like chunky fruits so I chopped everything big , but later realized should have chopped them smaller .The nuts and fruits need to be soaked overnight in juice . People consuming alcohol can add some rum to it , but since I do not I used apple juice .
This cake had a very earthy look , the coffee and the dates give it that gorgeous look . Candy peel in any cake is my weakness and I am forever digging into them . A lovely rich cake.
Xmas Cake
Ingredients
For soaking
1/2 cup orange / apple juice
1/4 cup dates
1/4 cup almonds and cashews
2-3 glazed cherries
1/2 tbsp tutti fruity
1/2 tbsp candy peel
1/4 cup currants and raisins
3-4 walnuts, chopped
1/4 + 1 tbsp brown sugar
Dry ingredients
1 cup all purpose flour
Pinch salt
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp coffee
Pinch cinnamon
1/4 +1 tbsp brown sugar
Wet ingredients
3 tbsp oil
1 tbsp curd +1 tbsp water
1/4 cup milk
Vanilla essence
Method
Add sugar to the juice, stir a couple of times and then add rest of the ingredients under soaking.
Mix all dry ingredients.
Mix all wet ingredients.
Mix the wet ingredients with the soaked ingredients.
Now add in the dry ingredients gradually.
Grease and line a baking tin.
Pour the batter in the tin and bake at 180 for 40-45 minutes or till a skewer comes out clean.
Note
Soak all ingredients under soaking in either orange or apple juice.
These should be soaked at least overnight.
X - Xmas Cake
Ingredients
For Soaking

- Pinch cinnamon

- 1/4 cup milk
- 1 tsp vanilla essence
Instructions
For Soaking

Next Day
- Mix all dry ingredients.
- Mix all wet ingredients
- Mix the wet ingredients with the soaked ingredients.
- Now add in the dry ingredients gradually.
- Grease and line a baking tin.
- Pour the batter in the tin and bake at 180 degrees C for 40-45 minutes or till a skewer comes out clean.
- Let cool before slicing the cake.

That is such a flavourful cake and you have made it look so beautiful. I am also not a fan of frosted cakes and I love these nuts and raisins soaked ones. Am bookmarking this!
