BM # 16 Day 2
BM gives me a chance to try new dishes which normally I used to try when we hosted parties.With the changing lifestyles socialising has taken a back seat….but I am glad with BM, my passion to try new dishes continues .Some how I have always fancied one pot meals. This mexican dish is really a very filling one with the goodness of lots of vegetables enough protein and a perfect taste. The kids who avoid veggies get carried away with the cheese patty .The mozarella lends it a wonderful cheesy taste that the children are fond of..some thing like a pizza taste with tomato cheese and olives!!
Rice
1cup………….. rice
1………………… sliced onion
½ cup………… mix vegetables
¼ ………………..capsicum chopped
1tsp ……………chilly pwd
1tsp…………… soy sauce
Salt to taste
Heat oil / ghee in a pan.
Add sliced onions and capsicum. Saute’.
Add th rice and fry for a few minutes.
Add mix vegetables,salt ,,chilly pwd and soy sauce.Mix well.
Add 2 cups water.
Transfer to rice cooker.
Cook till done.
Tomato Puree
1…………..small onion
4-6………..tomatoes
4 …………..cloves garlic
1……………bay leaf
2tbsp…… ready tomato puree
½ tsp ……red chilly pwd
Pinch sugar
Salt to taste
Chop onion and tomatoes roughly.
Heat 1tsp oil add bay leaf , garlic and onion.
Add chopped tomatoes.
Add 1 cup water. Cook till tomatoes are tender.
Cool the mix.
Blend in a mixer.Strain.
Add ready tomato puree,salt,chilly pwd and a pinch sugar.
Cook for a few minutes.
Cheese Patty
2cups………… grated cottage cheese
½ cup…………. boiled mashed potatoes
1tbsp………….. cooking cheese
2tbsp………….. corn flour
¼ tsp…………… red chilly pwd
Coriander leaves
Salt to taste
Mix all ingredients and bind into round pattys.
Shallow fry.
Keep aside.
Assembling
In a oven proof dish spread the prepared rice.
Place the pattys on this rice.
Pour the tomato puree’.
Sprinkle mozarella cheese.
Chop olives and place over pattys.
Bake in an oven at 450 deg for 15 minutes.
