BM # 49 Week 1 Day 3
Day 3 and I have one more version of Lotus stem. Bheea ji tikkio..which means tikkis made from lotus stem. There are two versions of these tikkis, one version, where we add potatoes and crumbs and fry them, in fact I have made these earlier. Check here. The other one is like a tikki pakora. We mash the boiled stem, add spices and make small tikkis and dip these into gram flour batter and deep fry to a golden. This surely is one of the most relished versions but the least made . Yes, you guessed right.these are deep fried and we all avoid it, but of course once in a while one can surely indulge,
Bhea ji Tikki
1 cup boiled lotus stem
2 green chillies, chopped
1 tbsp coriander leaves
1/2 tbsp mint leaves, chopped
1/8 tsp whole coriander seeds
1/8 tsp red chilly powder
1/8 Garam masala
1/8 tsp dry mango powder
Salt to taste
Gram flour batter
1/2 cup gram flour
Pinch cooking soda
Salt to taste
Add all ingredients and make a soft batter, the consistency of a pakora
Mash the lotus stem and all ingredients.
Mix well and make a dough.
Pinch out balls and flatten them.
Dip them in gram flour batter and deep fry.
For a crispier version
You could make balls with the lotus stem dough, dip the balls and deep fry.
Let cool , press them gently and re fry to a crisp golden.
These pakoras are much crispier and tastier than the tikki ones , but for now I have made the single fry version.

Lotus stems ki tikki, sounds wonderful. As I mentioned in my previous comment should start using them.
