A – Z Baking around the World is an interesting series where I am baking a Fruit Cake with the alphabet F. The earliest recipes of the Fruit Cakes are from Ancient Rome. They would use pomegranate seeds, pine nuts, raisins, and a lot more of other fruits but lot of variations took place subject to the ingredient availability. Different ingredients were used in different countries.
It is amazing to discover that Fruit Cakes are popular in many countries like Australia, Bahamas, Canada, France, Germany and even in India. They even have different names in different countries, but all said and done, these are traditionally served during Christmas and Weddings.
The cake that I have baked today was adapted from this video. The cake was slightly dense, but had a amazing flavor. The specks of nuts and fruits made it look pretty. The taste was awesome and one could easily relish all the flavors. We specifically loved the dried mango in the cake, it tasted heavenly.
I garnished the cake with some icing sugar and loads of dried fruits that I had picked from Amsterdam airport.
Fruit Cake
Ingredients
Dry ingredients
1 cup cake flour
( 2 tbsp corn starch +2 tbsp baking powder , rest all flour)
1/2 tsp baking powder
1/2 tsp baking soda
Pinch salt
1/2 tsp spice powder
( cardamom , cinnamon, cloves, nutmeg )
Wet ingredients
1/2 cup oil
1/2 can condensed milk
1 tsp vanilla extract
1 milk
Dried fruits and nuts
(raisins, cranberries, mango, cherry, cashews, almonds, pistachios.)
Method
Preheat oven at 180 degrees C.
Sift corn starch, flour and baking powder, soda, salt and all spice mix in a bowl.
In a separate bowl, blend softened butter and condensed milk. Add vanilla extract and mix.
Alternatively add flour and milk and keep blending till all the flour mix and milk are over.
Batter will be on the thicker side.
Fold in dry fruits and nuts making sure not to over mix.
Pour batter in a greased and lined loaf tin.
Bake for about 20-25 minutes or till cake leaves side or inserted toothpick comes out clean.
Let cool for 10 minutes.
Garnish with dried fruits and icing sugar.

This fruit cake looks amazing! Dried fruits and condensed milk would have given you a rich finish. Bookmarking this as I am sure my husband and daughter will absolutely love this!
Lovely crumb to the fruit cake. I always fear that the texture would be very dense with such fruit cakes, but this is a brilliant bake!!
what beautiful colors inside , loved the medley of fruits used in this one…you said it was dense, but it looks perfectly spongy and airy- but i guess most fruit based cakes tend to be denser and cakey within so i guess, you have done a lot better in that sense…will try this cake with the loads of dried fruits sitting my fridge
