I really look forward to Kalyani’s Magic Mingle ,it gives us scope to think and create…innovate!The two ingredients ,which should feature in the recipe are a interesting combo…For this month we have Almond and Ginger.The first thing that I could think of was Ginger Biscuits .I was very fond of these as a teenager.Infact every time we had a dinner I would make a pudding with these biscuits.Wonder where they are lost…not seen them in ages!!
Memories ,helped me to add almonds to those ginger biscuits.I normally avoid baking,most of the times the recipe demands lot of butter…or somehow find them full of calories…and to tell the truth I simply forget that somebody’s waiting in the oven!!..half the time things burn!!..This time I made sure and I put an alarm on my BB..and so here are these Ginger Almond Biscuits,which baked to a nice golden and tasted so so good.
¾ cup………. sugar
¼ tsp……….. baking soda
¼ cup……… chopped almonds
Milk to bind the dough.
Sift maida and baking pwd.
Clean ginger and extract juice.
Mix maida,baking pwd,butter almonds and ginger juice.
Adding milk bind the dough.
Roll and cut into the desired shape.
Bake at 180 deg for 15 minutes.
Cool on a wire rack.
Enjoy the cookies with some black coffee and your favorite book!!
