Rice forms an integral part of the life of all Indians.  While going through the varieties of rice, I was amazed.There are more than 40,000 varieties.I had heard of only a few, I stock only basmati rice as this is the rice that I have eaten since childhood so basmati tops the list in my cooking.Jasmine,sushi and arboiro are the trendy rice, or so I call them.These have been recently introduced to the Indian market.

Sticking to my love for basmati  I have  cooked  rice with pav bhaji masala and served  with corn raita.You could use  the variety of rice you like.

Rice

1cup…………. rice, washed and soaked for 30 mins

Salt to taste
1tsp………….. ghee/oil
Boil the rice in a rice cooker or in a pan.

 Veggies
2tbsp……….. oil / butter
1tsp…………. garlic, finely chopped
1tsp…………. green chilly, finely chopped
1tbsp………. onion, finely chopped
3tbsp………. capsicum, red, yellow, green, finely chopped
1……………….carrot grated
2tbsp………. fresh boiled peas
2tbsp………. boiled corn
½ tsp………. pav bhaji masala
¼ tsp red chilly pwd
Pinch turmeric
Salt to taste
Heat oil.
Add garlic,onion and green chilly.Saute’.
Add capsicums and carrot. Saute’.
Add boiled peas and corn. Saute’
Add spices and boiled rice.
Mix well.Simmer  for 5mins ,covering the pan.
Serve hot with chilled corn raita.

Corn Raita
1cup…….. whisked curd
2tbsp……. boiled corn
1tsp……… red capsicum, finely chopped
Fresh coriander leaves.
Green chilly finely chopped
Roasted cumin seed pwd
Salt to taste.
Mix the above ingredients, adjusting the flavors to your taste and chill.

    rice looks so colourful..must have tasted awesome with pav baji..

  2. Are there really so many rice varieties!!!I never knew..
    The rice is really colorful,its been ages since I made tawa pulao and the raita looks refreshing.
