Aaloo ka Chokha

Aaloo ka Chokha is a potato mash which is prepared in the Bihari style . The mash is seasoned with mustard oil and served with a bread called Litti .

While working on the theme Flatbreads and More , I posted the Bihari Litti . Litti is a Bihari flatbread in the form of a dough ball , stuffed with spicy sattu ,roasted over coal . it is a close cousin to Rajasthani Baati .

Aaloo ka Chokha is very simple to make , but the key to a good chokha is freshly boiled potatoes . If your potatoes are from the Frig , the chokha won’t taste as good . If you are short on time then you could microwave the boiled potatoes to give them the freshly boiled texture and taste .

For a authentic chokha you need to use mustard oil , it gives the dish a mild pungency . The onions are cooked till translucent so you get a crunch from them . Green chilly pieces are not really cooked and a bite into them gives you that sharp taste which I totally love .

One can serve the Aaloo ka Chokha with a bread toast or even with a chapati but it makes a delicious flavourful meal along with Litti and Tamatar ka Chokha . Bihari’s even serve a Baingan ka Chokha which is a brinjal mash , but due to my allergy , I have never made it .

Aaloo ka Chokha

Ingredients

2 potatoes , boiled
2 tsp mustard oil
1 green chilly , chopped
1 small onion , finely chopped
Salt to taste
Coriander leaves

Method

Peel and mash the boiled potatoes .
Heat a pan and add mustard oil .
Add cumin seeds, let crackle .
Add onions and sauté till translucent .
Add the boiled mashed potatoes .
Add salt , green chillies and lemon juice .
Mix well and garnish with coriander leaves .

  1. Litti choka is a classic combination and it’s nice to see one part of it here. It’s quite an easy preparation and like you said, it would even be good as a sandwich filling. Now I am curious about the baingan recipe. I will definitely look it up now.

  2. I have had tried litti with baingan chokha, need to try this aloo one. Litti chokha is a wonderful dish and quiet easy to make as well. I wish we could get Sattu here do I would have made it again.

  3. One of my Bihari friends was referring to aloo ka chokha the other day and I got the recipe from her and here you are with the same recipe 🙂 Looks good and aloo is always a winner.
