Aaloo ka Chokha is a potato mash which is prepared in the Bihari style . The mash is seasoned with mustard oil and served with a bread called Litti .
While working on the theme Flatbreads and More , I posted the Bihari Litti . Litti is a Bihari flatbread in the form of a dough ball , stuffed with spicy sattu ,roasted over coal . it is a close cousin to Rajasthani Baati .
Aaloo ka Chokha is very simple to make , but the key to a good chokha is freshly boiled potatoes . If your potatoes are from the Frig , the chokha won’t taste as good . If you are short on time then you could microwave the boiled potatoes to give them the freshly boiled texture and taste .
For a authentic chokha you need to use mustard oil , it gives the dish a mild pungency . The onions are cooked till translucent so you get a crunch from them . Green chilly pieces are not really cooked and a bite into them gives you that sharp taste which I totally love .
One can serve the Aaloo ka Chokha with a bread toast or even with a chapati but it makes a delicious flavourful meal along with Litti and Tamatar ka Chokha . Bihari’s even serve a Baingan ka Chokha which is a brinjal mash , but due to my allergy , I have never made it .

Aaloo ka Chokha
2 potatoes , boiled
2 tsp mustard oil
1 green chilly , chopped
1 small onion , finely chopped
Salt to taste
Peel and mash the boiled potatoes .
Heat a pan and add mustard oil .
Add cumin seeds, let crackle .
Add onions and sauté till translucent .
Add the boiled mashed potatoes .
Add salt , green chillies and lemon juice .
Mix well and garnish with coriander leaves .
