Sabudana and Badaam Ladoos are a Indian traditional sweet made with Sabudana , ground almonds , sugar and ghee . Melt in the mouth ladoos are a perfect treat while you are fasting .
I posted a version of Sabudana Ladoos yesterday but these ladoos are different than those , they have the goodness of protein rich almonds . Instead of adding chopped almonds I have added ground almonds . They merge with Sabudana and as a result the fussy kids will not be picking out the nuts . These ladoos will just melt in the mouth .
These are the last ladoos from the drafts section of Ganpati celebrations . But I still have a few more which I made recently . A rich draft section is a blessing when you want to be connected with your friends and when you are occupied with other things . Tomorrow’s ladoo is a special Ladoo , wait till tomorrow to know why !

Sabudana and Badaam Ladoos
Ingredients
1 cup sabudana / tapioca pearls
1 cup sugar , powdered
1/4 tsp cardamom powder
2 tbsp ghee
1/2 cup almonds
Extra ghee / milk for binding
Blanched almonds
Pinch saffron
Method
Dry toast sabudana on low flame, stirring continuously until they turn slightly brownish.
It will take 15 -20 minutes and the sabudana should be crunchy .
Let cool .
Grind the toasted sabudana to a fine powder. This step can be done in batches. Grind the mixture and sieve it if it appears coarse.
Collect the fine powder and again grind the coarse powder left in the sieve and repeat the process until you are left with finely ground sabudana.
Grind the almonds to a powder , reserving a few .
Combine the ground sabudana, sugar powder, ground cardamom and the powdered almonds along with the ghee .
Add melted ghee / milk to the mixture until you are able to hold it together.
Shape lemon sized balls out of the mixture by rolling between your palms.
Blanch the almonds and chop them in two after peeling .
Soak the saffron in water and using a mortar and pestle make a paste .
Apply the paste on the blanched almonds .
Garnish the ladoos with the saffron almonds .
Store them in an airtight container.

Adding almonds makes this sabudana laddoo more interesting and nutty at the same time. Who can resist to these cuties. My mouth is just watering here.

Thats another interesting version of your Sabudana ladoo. It looks sinful and must taste heavenly too! Blanched almonds coated with saffron sounds a great idea for Garnish. They look cute.
