Samosas are a hot favorite with me and I would normally eat them with a slice of bread and some spicy green chutney.Recently my son introduced me to a different version of samosa….sandwiched in a bun..with sweet imli chutney,spicy green chutney and the fiery red chilly garlic chutney!!.This Bun –Samosa is a very popular meal for college going students,who just pick it up and walk away.It sure is filling ..Two Samosas in one bun!!…and the top and bottom smeared with oil.welll I thought ..how ideal for a picnic!!…and simple too. ..So here is a lovely snack which you can take for your picnics..or in your lunch box…if you omit the fiery garlic chutney the kids will enjoy it too.You can make the changes according to your tastebuds.
3 buns
6 samosas
green chutney
imli chutney
chilly garlic chutney
Samosa crust
2 cups maida
½ warm oil
½ tsp ajwain
Salt to taste
Sift the flour.add salt and ajwain.
Add oil.
Knead into a semi soft dough.
Leave it for about 20 mins.
(this would make 6 to 8 samosas)

Stuffing
2cups boiled mashed potatoes
½ cup boiled green peas
3tbsp oil
1tsp jeera
½ tsp red chilly pwd
½ tsp aamchoor pwd
¼ tsp black pepper
¼ tsp garam masala
¼ tsp black salt
¼ tsp roasted jeera pwd
¼ tsp coriander seeds
¼ cup coriander leaves
A handful of cashews and raisins(optional)
Mint leaves
Salt to taste
Heat oil.
Add jeera .
Add all the spices and roast them for a few minutes .
Add potatoes and peas and rest of the ingredients.
Mix well.
Cool.
How to go about……
Roll out the dough in small thin round chapatis.
Cut them into half.
Make a cone.
Add the stuffing.close with the help of water.
Deep fry on medium flame till crisp and golden.

Green Chutney
1cup coriander leaves
4 green chillies
1medium sized onion
4 cloves garlic
A small piece of ginger
2tbsp lemon juice
Salt to taste
Grind into a fine paste.
Sweet chutney
1/2cup imli
2tbsp gur
2tsp red chilly pwd
1tsp jeera pwd
Pinch hing
Salt to taste
Boil the tamamrind pulp with gur.
Add the spices and boil once again.
Cool.
Chilly Garlic Chutney
10 whole red chillies
10-12 cloves garlic
2tsp oil
Add all the ingredients and make a paste using very little water.
And now the Bun Samosa….
Cut the bun into two.
Apply butter or oil on the top and bottom.
Apply all the three chutneys on both the halves(inside ).
Crush the fried samosas a little and place two samosas in one bun.
Cover with the top lid.
Press a little.
Cut into four pieces.
Serve.

you could pack these individually in a cling film and place them in a box.Enjoy them with your favorite drink.
