BM # 16 Day 7
For my nephew’s wedding I took charge of getting all the sweets from the sweet shop, and the chatter box that I am I started discussing the various mithais that this shop served.I saw a variety of parwal mithai which I found very interesting.These looked very attractive and inviting. I tried two of these and fell for them , ever since had been wanting to try these. So here I am with one of the variations. (yes, I grabbed the recipe from the mithai wala ).
Parwals
250 gms…….. parwal
Pinch baking soda
Peel the parwals.
Slit them legnthwise, discard the seeds, keeping the parwals intact.
Keep a pot of water to boil.
Add a pinch of cooking soda and parwals.
Cook till done.
Remove and gently squeeze out water.
Dip them in sugar syrup , leave it to soak for atleast 30 mins.
Stuffing
150 gms……….. fresh chenna / cottage cheese
1tsp ……………….finely chopped almonds
1tsp………………. finely chopped pistachios
Icing sugar as per taste
Large pinch cardamon pwd
Few strands saffron
Mash the cottage cheese ,adding all the ingredients.
Check the sweetness. It should be mildly sweet.
Assembling
Using a slotted spoon remove the parwals from the syrup.
Make oblong rolls from stuffing and place them in the slits.
Garnish
Garnish these with tutti fruity and pistachio silvers.
You could use warq (silver leaf) if you wish.
Chill and serve.
Wow!! This is all I could say after eating this mithai now I feel I should try a few more
mithais and then open up a mithai shop.. !!…
