BM # 31   Week 1  Day 3

For the final day of Mini Servings I have made Corn Poha . Poha or pressed rice is a lighter version of rice and is frequently made in our house.It gets monotonous to eat the same poha so I am for ever in search of a variety of these. These corn pohas could be served for any party , serve them in individual servings and pack them either in mini bowls or takeaway bowls.They look pretty as well. You could check Usal Poha and Damat Poha for some other variations in poha. 

2 tsp oil

1/4 tsp mustard seeds

1/4 tsp cumin seeds

Few curry leaves

2-3 green chillies, finely chopped
1 shall onion, finely chopped
1/4 tsp turmeric powder
1 cup grated corn
1 cup poha
1/2 tsp lemon juice
Salt to taste
Garnish
Grated coconut
Coriander leaves
Pomegranate
Heat oil.
Add mustard seeds and cumin seeds.
Add curry leaves .
Add onion and sauté till translucent.
Add green chilly.
Add grated corn and turmeric.
Cover and cook for 3-4 minutes
Add poha , salt and mix well.
Add lemon juice.
Cook for 2-3 minutes.
Serve hot garnished with grated coconut, coriander and pomegranate.

The corn pohas taste absolutely wonderful, with a mild sweetness of the corn and a  crunch of pomegranate.
