BM # 26   Day 3
Cakes are always relished by kids, specially home made tea cakes. I remember making these in different flavors for sending my daughter, when she stayed away. These stay fresh and moist,for quite a few days.This recipe , if using oil is really a hit in winters .The cake does not dry at all and is soft and spongy . So for the last day of this week of BM ,coking with APF , it is a orange flavored cake with nutty topping.

I would have loved to cut it and show how soft it is, but I took this for a friend , so you guys can’t peek in, sorry about that!

2 cups all purpose flour

3/4 cup butter / oil

1 tin condensed milk (400 gms)

1 tsp baking powder
1 tsp baking soda
1 bottle orange flavored aerated drink ( about 225 ml)
Orange extract
Sieve the flour, baking powder and baking soda.
In a bowl , mix oil, condensed milk and orange extract.
Beat lightly.
Start adding the flour mix little by little.
At the same time mix the orange drink also little by little.
Once all the flour has been mixed check the batter consistency .
Pour the batter into a greased, lined mould.
Sprinkle chopped almonds.
Bake in a preheated oven at 180 deg C for about 25 minutes or till the wooden stick comes out clean.

If you wish you can use orange juice, and some orange segments too. The nuts  can be added in the cake besides topping.

  1. I love orange bakes rather than citrus (lemony ones). so I am gonna try this out soon ๐Ÿ™‚ bookmarked ! When you say Orange extract, does it mean juice, Vaishali ??
