BM # 6 Day 1
First day of the BM # 6..how I had been looking forward to this marathon n wonder how I missed the announcement..Valli had to squeeze me in at the last minute..thanks dear.
There is something special about having picnics and eating outdoors, traveling some distance with your packed picnic baskets and hampers to eat your lunch beside a babbling stream or in a park under a large shady tree.
Of course the beach is always a favourite spot for some, however the food that we choose to take along is important..you dont want messy stuff.something delicious and easy to bite on.I prefer individual packings ,saves the hassel of serving.Since I have picked up Picnic Food as my theme for this Marathon,I will try to give you recipes which are ideal for picnics.Oh yes…you ofcourse need to carry juices or drinks and knick knacks to munch on…and some fruits which are always welcome.
Coming to today’s recipe Falafel ,Lebanese cuisine…this is a pocket sandwich ,where
the pocket is stuffed with some sauces ,salad and a chick pea patty.
PATTY
½ cup………chick peas
¼ cup …….chopped onions
1 tbsp…….. chopped garlic
2 tbsp…….. finely chopped parsley
½ tsp ………cumin seed powder
1 tbsp…….. finely chopped mint leaves
1 tbsp…….. finely chopped coriander
Salt to taste
Oil for deep-frying
FOR THE DRESSING
1/3 cup…… fresh curds,whisked
2 cloves… garlic,chopped
¼ cup……. chopped spring onions (including greens)
A pinch of sugar
Salt to taste
OTHER INGREDIENTS
6………… pita breads
¼ cup… thinly sliced onion
1 cup…. shredded lettuce / cabbage
¼ cup… grated carrot & sliced capsicum
`FOR THE PATTIES
Soak the kabuli chana in water overnight. Clean, wash and drain.
Blend in a mixer to a coarse paste.
Add all the remaining ingrediants and mix well.
Heat the oil in a kadhai and deep-fry the patty till gloden brown. Drain on
absorbent paper.

FOR THE DRESSING
Blend all the ingrediants in a mixer to a smooth sauce. Keep aside.
HOW TO PROCEED
Cut each pita bread into two .(mine was a pita bun so i scooped the bun from inside)
.Spread a layer of hummus , add in some salad, patties and a spoon full of dressing
on top.
(this dressing can be added at the time of serving to avoid moist patties)
HUMMUS
1 cup………. kabuli channa
Salt to taste
1 tbsp……… chopped garlic
2 tbsp……… lemon juice
2 tsp……….. tahini paste.
¼ cup……… fresh curd
2 tbsp ………olive oil
½ tbsp…….. chopped parsley, ¼ 1sp chilly powder and 2 1sp olive oil for garnish.
FOR THE TAHINI PASTE
2 tbsp…….. sesame seeds
2 tbsp……… lemon juice
2 tbsp……… olive oil
½ tbsp……… finely chopped garlic
Salt to taste
Roast the sesame seed on the tawa(griddle) for a few seconds
Cool,add all the remaning ingredients and blend in a mixer to a smooth paste.
You could wrap these individually in a paper napkin and then slide them in a sandwich bag..pull up the ends n tie it with a band.Place these in boxes.Dont forget to carry the sauce in a squeezy bottle.
