Healthy Seeds Brittle

Seeds Brittle is a crunchy snack , perfect for anytime munch it is loaded with goodness of protein . A healthy , nutritious and perfect candy .

The Candy theme attracted me , specially when I realized I could post the Seeds Brittle that I made sometime back to give as gifts to my daughter ‘s friends and my friends on my last visit to Chennai .
While travelling to Chennai I wanted to carry something that would be something nutritious as well as delicious . I used a variety of seeds , like pumpkin , sunflower and Chia seeds , and used Organic jaggery as the candy base . A little coconut and almond halves gave the brittle a little body . I used cardamom for flavour and Rose petals to adorn the brittle .
Sugar is the principal ingredient used for candies , though jaggery is a excellent substitute . I wanted to try some sugar lollipops but had to postpone these for the next time Valli announces this theme . Anyway let’s check the recipe for this Seed Brittle which makes an excellent candy and is my Day3 post under Candies come in different shapes

Healthy Seeds Brittle

Ingredients

250 gms jaggery
250 gms mix of seeds
( Sunflower seeds , pumpkin seeds , chia seeds )
1/4 cup almond halves
2 tbsp desiccated coconut
Cardamom pods
Rose petals

Method

Grease the counter of your platform and place a bowl of water before you start making the brittle
Heat 1 tsp oil in a nonstick pan .
Grate the jaggery and place it in the pan on slow heat .
Let it melt , while it melts , stir continuously , or it may burn .
The jaggery should turn golden and thick.
Test check by adding a drop in the bowl of water .
The ball should be hard , brittle.
Now add the seeds, almonds , coconut and cardamoms .
Mix well and immediately bring it down on the greased counter .
Quickly wet your hand and bring together the lump .
Sprinkle rose petals .
Using a greased rolling pin roll the brittle as thin as you can .
Using a pizza cutter make incisions .
Let set and then break into pieces .

  1. Nuts and jaggery is a great combination and I love the sprinkles of rose petals. It definitely makes it so much more pleasing to the eye.
