Ragi Cookies ! Yes,Thanks to my gym friends who are constantly after my life for healthy bakes . Every morning when we meet they want to know my menu of the previous day and if I made something new . Now it’s not possible to cook a new dish every day, right ? but their expectations are very high .
I have no recipes of Ragi on my blog and this being a healthy flour my friends asked me to try some cookies , so they get a tried and tested recipe and of course some cookies to eat . The day I carry some kind of cookies or cake to the gym , they make sure that maximum people taste it . I obviously go all red blue green with their compliments , and simply thank them .
Coming back to these Ragi cookies , they were loved by everyone and the cashews took these cookies to another level . I have one more version of these cookies which I shall be posting later . Make sure you roast the flour on slow fire till the raw smell disappears . After the dough is done and if you feel it’s on the soft side then place it in the frig for 10-15 minutes . Do not forget to cover the bowl with a cling film. If you do not want to cut them in shapes you could always make round balls and flatten them gently .

Ragi Cookies with Cashews
Ingredients
1 cup ragi flour
1 tbsp cornflour
1 tbsp all purpose flour
1 tbsp cocoa powder
1/2 cup brown sugar
1/2 cup butter, melted
1 tsp curd
1 tsp baking powder
1/2 tsp cardamom powder
1/2 cup cashew powder
Few cashews for garnish
Method
Dry roast the ragi flour for few minutes till the raw smell disappears.
In a large mixing bowl mix corn flour, all purpose flour, baking powder and cocoa powder .
Mix butter and curd and using a blender so that they are incorporated very well and sugar is dissolved.
Gradually add wet ingredients to dry ingredients and make a smooth dough .
Preheat oven to 180deg C.
Divide the dough into two balls and roll the dough .
Using a cookie cutter , cut the cookies of desired shape .
Arrange them on the baking sheet.
Place a cashew in the centre.
Bake it for 10-15 minutes or till the cookies slightly change in colour.
Once done, transfer the cookies to a wire rack and cool completely.
Store in a airtight container.

They obviously know your capabilities..and you are always so modest..I love these ragi cookies and I can easily camouflage with cocao and give my kids .I have done with cake and muffins..
I haven’t even opened my mouth at the gym that I have a blog! Hehe… I can’t take the pressure of expectations… hehe… The ragi cookies is a lovely idea… I must try them so that I can get the girls and myself to have ragi…
