Skillet Bread with Beans

I have a friend who is a generation older than me but very fond of cooking . I am amazed at her skills and energy . Her grandkids dote on her as she cooks best of everything . Seriously . Incidentally we meet everyday in the gym and our topic to discuss is new recipes !

On one such discussion she told me about the Skillet Bread with Beans . It definitely sounded like a dish which would be appreciated at home . She refused to give me the recipe , so we decided we meet and make it together . So all gym friends decided to meet at her place for lunch and while the rest were jabbering we both made the Bread with Beans . Since all prep work was done before, it was a breeze to make the actual dish.

The bread turned out extremely soft and with those beans made a complete meal . There were loads of more dishes but the Skillet Bread with Beans was the star of the day and my Day 2 post for the Special Theme.

Skillet Bread with Beans

Skillet Bread with Beans

Ingredients

Bread

300 gms all purpose flour
1 tsp yeast
1/2 tsp salt
2 tsp sugar
6 tsp milk powder
4 tsp butter

Beans

1 tbsp olive oil
3-4 cloves garlic , chopped
1/2 cup onion, chopped
2 green chillies
1 cup boiled kidney beans
1/4 cup tomato purée
2 tbsp tomato ketchup
1/4 tsp oregano
Chilly flakes to taste
Salt to taste

Other ingredients

Cheese

Method

Warm water and add yeast, salt , sugar, milk powder and butter .
Sieve the flour.
Adding the warm water mix , bind the dough .
Cover and let rest until double.
Punch down the dough and make balls and set them all around the skillet leaving  the centre empty.
Cover the skillet and let the bread rest for 15 minutes .
Meanwhile prepare the stuffing .
Once the stuffing is ready place it in the centre .
Grate cheese over it .
Apply a light milk wash to the bread and sprinkle oregano , chilly flakes and some cheese.
Bake at 180 deg C for 20-25 minuets .
