For this week I have chosen to cook Oceanic Cuisine . We had to check this page and decide our countries . Frankly I did not explore much . I read Thailand and I knew I would pick recipes from this cuisine .

 

Thai food is the cuisine of Thailand . This cuisine is an interesting confluence of flavours . The cuisine is influenced by Chinese , Malay and Indian cuisines .
Thai’s are basically rice eaters and their cuisine frequently uses lemon grass , chillies ,soya sauce, lime and sugar . The flavours are such that they balance salty, sweet , hot and sour .

 

For today I have made a simple salad with cucumbers , typically Thai . I used a spiralizer to get Cucumber noodles but you can cut the cucumbers into batons too . This salad is light and the sesame seed oil lends a wonderful flavour and aroma to the salad .

 

Thai Cucumber & Peanut Salad

 

Ingredients

2 cucumbers
1 small carrot
1/4 cup peanuts , coarsely crushed

 

Dressing

1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp honey
Chilly flakes
Salt to taste

 

Method

Spiralize the cucumbers and carrot .
If you do not have a spiralzer , you can cut the Cucumber length wise and remove the seeds from the centre with the help of a spoon .There after cut into batons .
Place them in ice water .
Mix all the ingredients for dressing in a jar , shake well and pour over the salad.
Sprinkle the crushed peanuts and serve.

  1. Your this salad has come at a right time. I’m not a salad person, but yesterday after looking at my weighing scale, that is shooting up, I have decided to include salads in my diet. It is so easy and must be good for non salad eaters like me 🙂

  2. can you tell me which spiralizer you use. I have been meaning to get myself one. frankly, you can’t get that noodle like strands with knife. Lovely salad. Will love to have a bowl full of it.
