We start with the 77 th edition of BM . This week I have chosen to cook Healthy Weekday Lunch recipes. In routine a basic Indian lunch contains of a daal, a green veggie, rice or chapati .salad and curd seem to be natural .
I have called this Thali as a Green Thali ! It was a day when I observed that all that we had cooked was green . It was a coincident and I took some random pics .

I have already posted most of these recipes , so decided to post Dudhi today.
Dudhi or bottle gourd is a watery squash which is very healthy and nutritious . It is light and quick to prepare . I remember this being one of my favorite dishes as a kid . Mom used to save a bowl for dad who used to come home for lunch .Rest of the family normally finished before he came . While everybody would be resting I would sneak in the kitchen and finish that bowl ! Once mom realized that the bowl was finished by me, she did not mind but hid another bowl for dad . Anyway let’s check the recipe of this simple veggie .
Dudhi ki Sabzi
Ingredients
500 gms bottle gourd
1 tbsp ghee
1 tsp cumin seeds
Pinch asafoetida
1 green chilly, finely chopped
1 small piece ginger , finely ground
Salt to taste
1/4 tsp turmeric
1/2 tsp coriander powder
1/4 tsp red chilly powder
2 tomatoes , puréed
Method
Peel the gourd , wash and chop in cubes.
Heat ghee in a pressure cooker.
Add cumin seeds and asafoetida.
As soon as the cumin seeds crack add the cubed gourd.
Add salt and turmeric powder.
Let cook on slow fire , water will ooze out but cook further till there is no water.
Add the rest of the spices and tomato purée.
Let all the moisture dry up . Once it is dry add about 1/4 glass of water.
Close the cooker and let cook for 2 whistles and then simmer for 5 minutes.
Open the cooker once the steam has released .
Dudhi / Bottle Gourd Curry
Ingredients

- 2 medium tomatoes pureed
Instructions

- Heat ghee in a pressure cooker.
- Add cumin seeds and asafoetida.

Ah, random turned out so good Vaishali..love all the dishes that are so green..very healthy one..I was thinking about a simple everyday meal, but then you make everything so elaborate sound so simple right..very lovely!

it has been a while since I made an elaborate meal like this. i hv never liked lauki though. :(. I know its good for us and all. so, I just add it in soups, so that I wont the taste of it

Dudhi subzi looks delicious, i make kootu with doodhi, but this subzi is different, will give it a try next time!! 🙂
