Can you believe we are half way through with this marathon?Time sure flies!!
When it comes to choosing flavors, I normally choose orange after chocolate. For today I have some whole wheat orange cookies. I added some oats to make them more healthy. The cookies turned out pretty good , though I wish I had added some more fat, as they should have been a little more soft. They were crunchy, but lacked the moistness that I was looking for. I had made only a small batch , and they were over right away.

Whole Wheat Orange Zest Cookies
1 1/2 cups whole wheat flour
1/2 cup oats
1 tbsp corn starch
1 tsp orange zest
1/3 cup orange juice
a pinch of salt
1/2 cup oil
1/2 cup brown sugar
1/2 tsp baking powder
1/4tsp baking soda
Add orange juice, sugar and oil. whisk till the sugar dissolves & and everything has mixed well.
Sieve the whole wheat flour, salt, corn starch, baking powder and mix well.
Add the orange zest. stir lightly and then add the oats.
Mix everything with hands and knead to a soft dough, divide the dough into 12 to 14 small balls.
Flatten the balls and arrange them on a greased baking tray with enough space between them.
Bake in a preheated oven for 200 deg C for 20 to 25 minutes.
Let cool and store .

Note : I realized I had used oats, so should have added at least 1 tsp extra oil, if you are using only wheat flour then 1/2 cup oil should be perfect.
