Amaranth & Nuts Ladoo are healthy, nutritious, and delicious, perfect for any festival or In kid’s lunch box or you can even carry them while you travel.
Amaranth or Rajigiri is a super grain. It has many health benefits. It’s gluten-free, high in both protein and calcium, helps in reducing weight. I have been planning to incorporate this nutritious grain in our regular menu, but somehow wasn’t able to do so.
Recently I received a packet of organic supplies from my daughter’s friend, Archana. Archana lives in Chennai and has a wonderful team that works on supplying us with Organic products. You could check for these here. Let’s read what she has to say about them.

Taru has a network of 10000 farmers all over India and they train the farmers and certify them to be truly organic. All our grains, rice & millets are unpolished and all your flours are hand-pounded by the farmers at the village itself.
So, I have used the Taru Amaranth Flour, Ghee, and Jaggery and made Ladoos. The Ladoos with these organic products were absolutely amazing, rustic with a wonderful flavor that was lent by these organic products.

Recipe Inspiration: Suma
Amaranth & Nuts Ladoo
Ingredients
6 tbsp ghee
1 cup Rajgira ka atta / Amaranth flour
1/2cup pistachios, chopped
1/2 cup almonds, chopped
12 -16 tbsp. powdered jaggery
1 tsp cardamom powder
2 tbsp poppy seeds
Method
Heat a pan and add ghee.
When ghee melts, add amaranth flour and toast it on low flame until you start to smell the aroma, about five minutes.
Lightly roast the pistachios and almonds, keep them aside to cool.
Mix all ingredients in a blender, so that they come together. This can be done by mixing with hands too.
Transfer the ingredients onto a plate or bowl.
When the mixture is cool enough to handle, shape them into balls.
Shape the laddus when the mixture is still warm.
Garnish with almond flakes.
Let them cool and store them in an airtight container.

Hi do you roast the poppy seeds too? do you add it with nuts?
You can add either ways, roasted definitely are better, just in case they have any moisture.
